If you’re looking for something tasty for dinner, you don’t need to work too hard for great results. Pork fillets are easy to find and often affordable, while you’ve probably got bacon and mustard at home already. This bacon-wrapped pork fillet is perfect on a bed on mustard mash, and is great for serving a large group of people . The recipe doesn’t have a sauce but the pork is super tender and the flavoured mash doesn’t need anything else for an amazing experience.

Bacon-wrapped pork fillet suggestions

You can seer the pork fillets in a skillet to add some flavour from browning before wrapping in some streaky bacon. The seasoning is simple but you can play around with flavours before wrapping. A great way to keep them together is putting it all in cling-wrap and making it tight before securing with toothpicks. The mash is buttery and fluffy, which will make you smile with each bite. You can also serve this whole dish alongside a fresh green salad.

A filling dish suitable for week nights as this meal does not require a huge amount of preparation time or a lot of ingredients.

Ingredients

  • For the Pork
  • 2 2 pork fillets

  • 2 2 packs of Bacon

  • 4 tbsp 4 garlic

  • salt (to taste)

  • pepper (to taste)

  • For the Mustard Mash
  • 4 4 large potatoes

  • 1 cup 1 milk

  • 4 tbs 4 whole grain mustard

Method

  • Pre-heat the oven to 180°C.
  • Rub the pork with garlic, salt and pepper.
  • Wrap the bacon around the pork fillets and place into an oven dish.
  • Place the dish into the oven and bake for 35 minutes.
  • For the mustard mash
  • Boil a pot of water and place peeled potatoes in the pot to cook until soft.
  • Mash them in a bowl.
  • Add the mustard and milk and mash until smooth and creamy
