Get ready for summer with these super refreshing Pineapple Cream Sundaes. These tropical desserts will revitalise your cells and give you all the refreshment you need during the hot summer months. Pineapple Cream Sundaes are a delicious combination of cream, pineapple and crunchy crumble. Just perfect for those of us with a sweet tooth.  

It takes only twenty minutes to do the prep work for these tasty beauties. Then, they are popped into the fridge to cool down for an hour. So, in less than an hour-and-a-half, you can have these invigorating desserts read to enjoy next to the swimming pool.

With their extraordinary sweet-and-sour juiciness, pineapples are the perfect fruit for this delightful dessert. Pineapples are packed with nutrients and antioxidants. They also contain enzymes that combat inflammation and are a powerful immune booster. This means that they may reduce the effect of arthritis as arthritis is basically inflammation of the joints. Ingredients

  • 1 tin 1 crushed pineapple, drained

  • 1 packet 1 ginger biscuits, crushed

  • 250 ml 250 fresh whipped cream

  • 250 ml 250 cream cheese

  • 125 ml 125 icing sugar

  • 1 packet 1 lemon jelly

  • 300 ml 300 hot water

  • Cherries in syrup

Method

  • Mix the jelly with the water and place in the fridge.
  • Mix the cream cheese, pineapple, sugar and cream.
  • In glasses or bowls, layer the biscuits and cream cheese filling. Pour over the jelly, dividing it between the glasses.
  • Place in the fridge to set. Serve with fresh cream and cherries.
