Pavlova – Elegant meringue-based dessert

Ever tried to make your own pavlova? This delightful dessert is a decadent and elegant addition to any dessert table. It has a meringue base usually filled with cream and topped with fruit.

Do you know where this featherlight dessert got its name? Pavlova is named after the Russian ballerina Anna Pavlova.

When the meringue has cooled down, fill it with whipped cream and fruit of your choice. In this recipe, we have used kiwi fruit and a variety of berries. This combination is not only tasty but a colourful spread for the eyes as well. The colourful display will draw all eyes to the pavlova on any dessert table.

Preparing this dessert will take about an hour-and-a-half so you need to make sure you have enough time on hand to whip these gems together.

Ingredients

  • 4 egg whites

  • cups white sugar

  • 1 teaspoon vanilla essence

  • 1 teaspoon lemon juice

  • 2 teaspoons cornstarch

  • 1 litre heavy cream

  • 6 kiwis, peeled and sliced

Method

  • Preheat the oven to 150°C.
  • Line a baking sheet with parchment paper and draw a 9-inch circle on the parchment paper.
  • In a large bowl beat the egg whites until stiff but not dry.
  • Add in the sugar a little bit at a time and beat well after each addition. Beat well until thick and glossy.
  • Fold in the vanilla, lemon juice and cornstarch.
  • Spoon the mixture into the circles drawn onto the parchment paper. Work from the centre and spread towards the edges.
  • Bake for 1 hour and let it rest on a wire rack.
  • In a small bowl beat the heavy cream until it forms stiff peaks.
  • Fill the pavlova with whipped cream and top with kiwi slices and other fruit.
