What do South Africans jump to when they want a sweet snack during cold and rainy weather? It’s pancakes of course and for South African’s that’s our version of French-style crêpes. However, you can do more than just fill them with that iconic cinnamon and sugar mixture. We aren’t just going to make Nutella pancakes, but pancakes filled with chocolate mousse for a rich and decadent dessert that that will turn any gloomy day into one with smiles and a bit of a sugar rush.

Pancakes filled with chocolate mousse tips

You can make your own homemade crepes instead of buying them because fresh is always better as the mousse needs to set in the fridge while you make the batter. This recipe is so simple but blissfully delicious. Fill the pancakes with the prepared decadent, smooth, dark chocolate mousse. Then, garnish the filled pancakes with juicy, red strawberries. And finally, dust them with a cloud of icing sugar. You can also add a topping of whipped cream.

Ingredients

  • 6 6 pancakes (baked or store bought)

  • strawberries (sliced)

  • 5 ml 5 icing sugar

  • 200 ml 200 fresh double cream

  • 300 g 300 dark chocolate

Method

  • Melt the chocolate over a double boiler (a saucepan with a bowl over the pan).
  • Beat the cream until firm. Pour the melted chocolate in slowly, keep beating until a thick consistency is formed.
  • Fill each pancake with the chocolate mousse. Roll and garnish.
  • Optional: You can also just fold them and add any fresh berries.
