Summer in South Africa can be beautifully sunny, but rain also plays a big role. You always want some comfort food when you’re all snuggled up with your loved ones watching movies. One-pot dishes are the way to go as they take very little preparation and have a lot fewer dishes to clean after. Chicken casserole is a great way to spend rainy days indoors. Chutney & Mayo Chicken Casserole is sweet, savoury and will always hit that comfort zone to warm you up from the inside. Using ingredients you probably already have at home is the best way to go about the process.

Chutney adds that familiar sweetness to any dish without overpowering, and using Mrs Ball’s South African chutney is perfect. It adds so much flavour that you don’t need many other ingredients, making it easy to prepare for anybody. Mayonnaise doesn’t add much flavour, but it helps bring the rich sauce to a great consistency. Your chicken will be perfectly tender while the rice will also cook perfectly in the sauce. Every bite of Chutney & Mayo Chicken Casserole will warm the hearts and souls of everybody around you.
