Malva pudding – Sweeten your weekend plans with an old favourite

Dessert time does not get better than this.

There is truly something special about malva pudding. Ask any South African and they will confirm it. Loaded with comfort and sweetness, this dessert always hits the spot.

Although this proudly South African dessert is mostly associated with the winter season, nothing stops you from enjoying it throughout the year. It is tasty enough to indulge in this sweet treat at least once a month.

This pudding has a sponge cake-like texture combined with a slightly caramelised taste. As soon as the malva cake comes steaming hot from the oven, a warm creamy sauce is poured over. The sponge cake absorbs the sweet sauce which results in a super moist pudding that you just cannot get enough of.

For the ultimate taste experience, smother the malva pudding with creamy custard. If you are in the warmer season, you can even add a scoop of ice cream. This pudding is foolproof and a winner every single time.

Ingredients

  • Malva cake
  • 20 ml 20 butter

  • 250 ml 250 castor sugar

  • 2 2 eggs

  • 12½ ml 12½ apricot jam

  • 5 ml 5 baking soda

  • 125 ml 125 milk

  • 5 ml 5 vinegar

  • 250 ml 250 cake flour

  • 1 pinch 1 of salt

  • Sauce
  • 250 ml 250 cream

  • 180 ml 180 sugar

  • 125 g 125 butter

  • 125 ml 125 water, boiled

  • 5 ml 5 vanilla essence

Method

  • Preheat the oven to 180˚C.
  • Grease a 25 cm round pyrex bowl.
  • Malva cake
  • Using an electric mixer, cream the butter and sugar until light and fluffy.
  • Add the eggs one at a time, making sure to mix well after each egg.
  • Next, mix in the apricot jam.
  • In a separate bowl, mix the baking soda and milk together. Add the vinegar.
  • Add the flour and the milk mixture to the butter mixture alternating between the two. Finally, add the salt and mix well.
  • Pour the batter into a prepared dish and bake for 45 minutes or until done.
  • Sauce
  • Mix all the ingredients together. Heat the ingredients up until the mixture boils.
  • Once the malva cake comes out of the oven, pour the sauce all over.
  • Serve hot with custard.
