We’re all trying to eat more healthy food and while it’s winter, it’s especially important and having some tasty winter soup always provides smiles while also being healthy. This kale and sweet potato soup is packed with healthy nutrients and looks great as it gets served with your choice of sides. With some simple but nutrient-packed ingredients, you can have absolutely delicious meals which can have great impacts on your health at the same time.

Kale and sweet potato soup suggestions

To retain that beautiful green colour of the kale while also not losing any nutrients like Vitamin, K and C, blanching the kale before adding to the soup is a great idea. The sweet potatoes will thicken the soup immensely when blended and you can add croutons, a drizzle of olive oil or some cream when serving alongside some garlic bread.

Ingredients

  • 1 bag 1 kale

  • 2 2 sweet potatoes

  • 1 clove 1 garlic

  • 1 cube 1 stock

  • garlic bread to serve

  • 2-3 cups 2-3 water or vegetable stock

Method

  • Peel the sweet potatoes and chop them into small cubes.
  • Add water and boil with the garlic after peeling as well as the stock cube.
  • Blanch the kale for 2 minutes before putting into ice water to cool quickly.
  • Add the kale and boil it together.
  • Blend to make a smooth soup.
  • Serve with hot garlic bread.
