Cooking is one of the most therapeutic and fun activities as you get great food in front of you as well as your family and friends. However, you can always try and get more into your food and herb-infused cooking oils are a great way to go. The great part about infused oils is that they don’t overpower your meals and you can also use them for snacks as a topping so that they become the hero of whatever you’re eating.

The recipe below gives you some great options for infused oils and the hardest part is just waiting for them to infuse flavour. You can however add your own combinations like making chilli-infused oils in the same way. Great simple recipes to enjoy with these oils might be when making scrambled eggs or omelettes or topping some bread slices on the snack table. A bit of butter and infused oil is a great snack and you can still add your preserves like olive tapenade.

Make your own infused cooking oils to add extra flavour to your dishes.

Ingredients

  • 200 ml 200 canola oil

  • 200 ml 200 olive oil

  • 3 3 peeled garlic cloves

  • 3 3 fresh rosemary sticks

  • 3 3 fresh thyme sprigs

  • 3 3 chillies, sliced

  • fresh black, red and green peppercorns

Method

  • Pour the olive oil and canola oil into a 500ml glass bottle.
  • With the palm of your hand, crush each garlic clove to release the flavor.
  • Add crushed garlic to the bottle of oil.
  • Add the rest of the ingredients.
  • Allow to sit for 48 hours before using.
