Cooking for your family should but as simple as possible while providing them with all of the flavour and of course nutrition. Did you know that you can make a perfect roast dinner during the week too? This garlic beef roast is a recipe anybody can make with just a couple of ingredients you’ve got in your pantry and fridge. The roast beef can be popped into the oven and almost forgotten about for a while as you make sides and accompaniments.

Garlic beef roast suggestions

You can roast this meal in about an hour, but if you’ve got more time, cooking it low and slow for longer will yield more tender beef. Some roasted potatoes and vegetables go perfectly well with the sides and adding stock to the roasting pan will help you make a beautiful gravy later. The roasted garlic will flavour the beef and is going to pair well with the seasoning. You can also add more herbs and get creative with this very simple recipe.

Ingredients

  • 1 kg 1 beef roast

  • 3 3 fresh garlic cloves, sliced into quarters

  • 15 ml 15 olive oil

  • 6 6 slices of bacon

  • 15 ml 15 Italian herbs

  • salt & pepper

Method

  • With a sharp knife, make 6 insertions in the meat, spaced evenly. Fill each insertion with a garlic piece. 
  • Mix the olive oil and seasoning. Rub all over the meat. Wrap the bacon over the top of the roast.
  • Place the roast in an oven dish. Cover with a lid and cook at a preheated oven, 160°C, for 90-minutes to 2 hours. Remove the lid and place back in the oven for another 30 minutes at 180°C.
