It is well-known that Nelson Mandela did not like sweet treats or any sugar-coated food. However, funnily enough, he was very fond of this fried butternut recipe which contains a generous quantity of golden syrup. Tata used to comment how much he enjoyed the fragrance of the cinnamon.

Ingredients

  • 1 kg 1 butternut, peeled, seeded and cubed

  • 45 ml 45 sunflower oil

  • 30 ml 30 butter

  • 45 ml 45 golden syrup

  • 5 ml ground cinnamon

Method

  • Cook the butternut in boiling water until it is cooked but still firm.
  • Drain the water.
  • Heat oil and butter in a pan and fry the butternut until golden for about 5 minutes.
  • Add syrup, sprinkle cinnamon and toss well.
  • Serve hot.
