The chicken breast adds that much-needed protein for maintaining your muscle function. Veggies such as carrots, peas and mushrooms provide a lot of other vitamins and minerals. The Farmhouse Soup recipe is as easy to make as anything you’ve made before and is perfect for lunch or dinner.

Ingredients

  • 8 8 Chopped baby potatoes

  • 90 g 90 Chopped carrots

  • 70 g 70 Peas

  • 90 g 90 Chicken breast

  • ½ cup ½ Chopped onion

  • 20 g 20 Crushed garlic

  • 2 tsp 2 Extra virgin olive oil

  • 65 g 65 Chopped mushrooms

  • 2 tsp 2 Dried Italian herbs

  • 1 pinch 1 Salt

  • 1 pinch 1 Pepper

  • 500 ml 500 Water

Method

  • In a large pot, saute the onion and garlic into the extra virgin olive oil.
  • Chop the baby potatoes, mushrooms and carrots into small bite-size pieces and add to the large pot.
  • Add the peas to the pot and add the spices (salt, pepper and Italian herbs).
  • Top up with water until all the vegetables are covered. Let it simmer for 20min.
  • Cut the chicken breasts into small cubes and place them into the large vegetable pot. Cook until chicken is fully cooked through, stirring regularly.
  • Serve while warm.
