The year has begun and it’s off to work. You need comfort food and something easy to make for yourself and the family during the busy weeks ahead. Pasta is probably one of the greatest comfort foods out there. There are so many different types but our One Pot Chicken Pasta will become your new favourite. If you use an oven-safe or braai-safe pot, you can make it indoors or on a nice sunny day outside. It’s also an easy meal you can prepare during those busy weeks when you don’t want to be cooking for hours.

You’ll be making a hearty chicken sauce with tomatoes, mushrooms and peppers for the best nutrients and heartwarming flavours. It’s then to the oven or on the braai coals and you’ll be melting cheese and grilling it to golden perfection. It’s like a pasta al forno but with a South African twist. Cooking time is less than 90 minutes but a lot of the time you won’t be near the pots while you relax and wait for the magic to happen.

Ingredients

  • 1 kg chicken breasts, boneless or chicken portions (about 12 pieces) cut in small chunks

  • ½ punnet of mushrooms, sliced

  • 1 large onion, diced

  • 1 red pepper, diced

  • 1 green pepper, diced

  • 1 packet Cook-in sauce mushrooms and wine flavour

  • 500 g pasta rice

  • 250 ml coconut cream or milk

  • olive oil

  • 1 cup grated cheddar cheese

  • 2 tomatoes, sliced

  • black pepper

Method

  • Heat the pot and add the olive oil. 
  • Sauté the onions, red and green pepper until lightly golden brown, add the chicken pieces, brown them lightly.  
  • Add the mushrooms and mix well. 
  • Pour in The Cook in Sauce and add water until covered. 
  • The pasta rice must be added to this mixture, mix well and cover.  Keep on low heat for 45 min to 1 hour or until the pasta is cooked. Remove from the heat.
  • Stir in the cream, sprinkle the cheddar cheese over the top and place tomatoes on top of the cheese. 
  • Grind with black pepper and place under the grill if you are making it on the stove, or otherwise add hot coals on the lid for 30 minutes.
