Bell peppers are sweet and very tasty with almost any breakfast. Our Eggs in a Bell Pepper Basket are quick to make and suits almost any lifestyle.

Eggs provide a great amount of protein in a small bundle while peppers add vitamins and minerals you need for the day. Baking your eggs in these pepper baskets make for less effort other than frying your eggs. You can also prepare the rest of the day’s meals while they are in the oven. If you want to add more fat and protein, you can easily add a sprinkle of bacon on the top too. Each serving is only 233 calories without any other additions, making it light to suit your calorie needs. It’s a great meal to start your morning or a post-workout light meal to assist with recovery.

Eggs in a Bell Pepper Basket Recipe

Ingredients

  • 1 small 1 bell pepper, halved and seeded

  • 30 g 30 feta cheese, low fat

  • 2 medium 2 eggs

  • 1 pinch 1 salt

  • 1 pinch 1 black pepper, ground

  • 1 tsp 1 mixed herbs, dried

Method

  • Preheat the oven to 180°C (350°F).
  • Place the halved bell pepper on a baking tray.
  • Mix the salt, pepper and herbs together in a small bowl.
  • Crack 1 egg into each bell pepper half. Sprinkle some herb mixture over each egg.
  • Sprinkle half the feta cheese over each egg.
  • Bake in the oven (16 minutes for soft egg yolks or 22 minutes for hard egg yolks).
  • Serve warm.
