If you have ever had the opportunity to travel to Thailand, you will be familiar with chicken satay. This well-known Thai street food can be found on almost every street corner in Thailand.

This Southeast Asian dish is basically skewered marinated grilled meat and served with a mouth-watering sauce. Preparing chicken satay is much simpler than you can imagine and is a light meal you can easily prepare at home.

Marinating the meat is vital to ensure that the strong Asian flavours infuse properly with the meat. The meat only needs to be grilled for about three to four minutes per side. To complete your Asian taste experience, a peanut sauce has been included with this recipe.

Of course, you do not have to use chicken. You can replace the chicken with pork or beef. Just make sure you marinate the meat well and serve it with the lip-smackingly delicious peanut sauce.

Ingredients

  • Satay marinade
  • 1 kg 1 chicken fillets

  • ¼ cup ¼ soya sauce

  • ¼ cup ¼ vegetable oil

  • 2 tablespoons 2 Asian chilli sauce

  • ¼ cup ¼ dark brown sugar, packed

  • 2 garlic cloves, minced

  • 2 tablespoons 2 coriander, chopped

  • 2 limes, juiced

  • Peanut sauce
  • 1 tablespoon 1 peanut oil

  • ½ cup ½ smooth peanut butter

  • ½ cup ½ coconut milk

  • ½ teaspoon ½ chilli sauce

  • juice of a lime

Method

  • Satay
  • Cut the chicken breasts into ¼ inch cubes.
  • In a container, mix all the ingredients together.
  • Place all the chicken cubes in the marinade. Place in the fridge for 2 hours.
  • Thread three pieces of chicken on a skewer.
  • On a grill pan, medium heat, grill the chicken skewer until golden brown approximately 3 – 4 minutes per side.
  • Peanut sauce
  • In a saucepan, heat the oil on low heat. Add the rest of the ingredients. Mix until smooth. Remove from heat. Let cool.
  • Serve the satay with basmati rice, slices of cucumber or a garden salad. Sprinkle with fresh coriander leaves.
