Ingredients

  • ¼ cup ¼ olive oil

  • 1 large 1 onion, chopped

  • 3 large 3 carrots, sliced

  • 4 stalks 4 celery, chopped

  • salt and pepper to taste

  • 3 cloves 3 garlic, chopped finely

  • 2 litres 2 chicken broth/stock

  • 225 g 225 noodles/pasta

  • 500 g 500 shredded chicken breast (cooked)

  • ½ cup ½ fresh parsley chopped fine

Method

  • Heat the olive oil in a large pot on medium heat. Once simmering, add the onion, garlic, carrots, celery, and salt and pepper. Cook for 20 minutes, or until the vegetables are soft.
  • Add the stock and bring it to a boil.
  • Add the noodles and cook for 5 minutes.
  • Next, add the chicken and let it simmer for 8 minutes for the flavours to infuse.
  • Season to your taste, then add parsley and serve hot.
