A good braai during a South African summer isn’t all about the meat on the fire, but about the companionship. It’s the companionship of friends and family who also bring along their most amazing sides to accompany the delicious meats. One of the best sides that always make an appearance are fritters of many kinds. These Sweetcorn Fritters are bound to become the most requested sides at the party. Not only are they fantastic as a side, but you can eat them with your hands, and what’s better than that?

Our Sweetcorn Fritters are all about convenience and simplicity. You need to mix it all together and fry it in a hot pan. It works just as well on a cast-iron surface which you can place on a braai. If you want to add some more spice, add paprika or chili flakes to give these fritters a kick. For a dipping sauce, tzatziki is a very good choice.

Ingredients

  • 5 ml baking powder

  • 1 can sweetcorn

  • 1 cup flour

  • 1 whole egg

  • salt and pepper to taste

  • 1 wheel feta cheese

Method

  • Mix together all the ingredients, shape into fritters and pan-fry in hot oil until golden.
  • Drain on kitchen paper and serve.
