South Africans celebrate everything with great spreads of food and we always enjoy all kinds of sides with our braais and roasts. One of our favourite sides are some pumpkin fritters and did you know that you can make them sweet and still enjoy them with your meal? These butternut fritters smothered in sweet caramel sauce are enjoyed with or after the meal. The light butternut pancakes pair perfectly well with the light caramel sauce and can be served alongside a variety of meals.

Butternut fritters suggestions

Very often, these fritters are prepared with pumpkin but for this recipe, butternut has been used as it provides a firmer consistency. Whip these divine bites together in only 40 minutes. Pork often goes well with sweet and sour flavours, so these fritters are a great side to a pork roast. You might think that they are best during winter but they are great with a summer braai too. If you want to enjoy them for dessert, they will be just as tasty and nothing is stopping you from adding a scoop of vanilla ice cream.

Butternut fritters with caramel sauce recipe

Ingredients

  • For the butternut sauce
  • 2 2 medium cooked butternuts (cubed)

  • 375 ml 375 flour

  • 5 ml 5 baking powder

  • 2 2 eggs

  • For the caramel sauce
  • 125 ml 125 butter

  • 100 ml 100 brown sugar

  • 5 ml 5 vanilla essence

  • 125 ml 125 vegetable oil

Method

  • Mix the butternut, eggs, flour and baking powder.
  • Heat half the oil in a frying pan to a medium heat. Scoop spoonfuls (not more than 4 at a time) in the pan. When it is cooked halfway through, turn it over. 
  • When golden brown, place on kitchen paper to remove excess oil. Place in an oven dish. Repeat until batter is finished. Replenish oil if needed.
  • In a saucepan, heat the butter and add the sugar and vanilla. Cook on medium heat until a thick sauce is formed.
  • Pour the caramel sauce over the fritters. Place in a medium preheated oven for 10 minutes before serving.
