What is better than a warm pudding after your main meal on a cold winter’s evening? This bread pudding ticks all the boxes for a delicious dessert.

This bread pudding gives a whole new meaning to comfort food. Enjoying this delightful dessert with creamy custard in front of a crackling fire on a cold evening will give you all the comfort and cosiness you need.

This recipe is light and not too sugary. It is just sweet enough to make you crave another bite. The best part of preparing this sweet treat is that it contains ingredients you probably already have in your pantry, so no need for an extra trip to the shops. The ingredients are furthermore all super budget-friendly.

Ingredients

  • 4-8 slices 4-8 white bread

  • apricot jam

  • 4 4 eggs

  • ¼ cup ¼ sugar

  • 5 ml 5 vanilla

  • 500 ml 500 milk

  • butter

  • ¼ cup ¼ coconut

  • 1 teaspoon 1 ground cinnamon

Method

  • Heat the oven to 82ºC.
  • Spread the bread thinly with jam.
  • Arrange the slices in a glass bowl of your choice, you can halve one of the slices to fill it up in the middle depending on your oven dish.
  • Add a few dots of butter on each bread slice as you add the bread to the dish.
  • Sprinkle with coconut sparingly or to your taste.
  • Separate the eggs into two bowls.
  • Mix the egg yolk with milk, sugar and vanilla. Whisk it well.
  • Cover the bread with the milk mixture and allow the bread to absorb it fully.
  • Beat the egg whites until stiff and cover the pudding with the stiff egg whites.
  • Sprinkle with cinnamon.
  • Bake for 35 minutes.
  • Serve with custard.
