Biltong pâté: Your braai day starter for crackers and cheese

When you have a braai, it’s going to take a while, so the snacks are everything. Get some biltong pâté on that table with some fresh bread.

When you think of South African snacks, there’s only one that will come to mind, biltong. A cured meat, usually beef, biltong has a real place in South African culture and is the preferred snack for rugby games and any day when people come together. It differs from jerky which is often much chewier and sweeter. When made into a biltong pâté, becomes a great addition to your snack table loaded with fresh bread, salty crackers and cheese.

Biltong pâté suggestions

You will be using already powdered or grated biltong and you can make your own by using extra dry biltong and pulsing it in a food processor. You can make your own chives cream cheese with fresh chives and the addition of mayonnaise will help emulsify it into a smooth and luxurious paste. Pink and green peppercorns add a different, more floral flavour for a very different affect. You can also add some spice with cayenne or paprika pepper spice.

Ingredients

  • 50 g 50 full-cream smooth cream cheese with chives

  • 30 ml 30 mayonnaise

  • 30 ml 30 lemon juice

  • 30 ml 30 wholegrain mustard

  • 30 ml 30 pink, green or black peppercorns, crushed (bottled)

  • 125 ml 125 grated biltong

  • black pepper to taste 

Method

  • Combine all ingredients in a bowl.
  • Mix well, using a fork.
  • Divide between jars and seal them.
  • Serve with Portuguese bread or any other bread of your choice.
