Sweet potato fritters: Delicious side dish for a special dinner

If you are a fan of fritters, you will fall in love with these sweet potato fritters. Fried to golden brown deliciousness, this side dish is perfect to accompany any main meal you are preparing. It goes especially well with a Sunday roast.

We all know pumpkin fritters as it is a traditional South African favourite. This time around, we use sweet potato to prepare a similar side dish, although not as sweet as pumpkin fritters. Preparing this tasty side dish will take less than an hour of your time. You need 20 minutes to prepare the batter and another 20 minutes to fry these golden beauties.

Working with the batter can be tricky if it keeps sticking to your hands. A clever tip is to make your hands wet when working with the batter, then it will not stick to your hands. This works especially well when you shape the potato fritters.

Ingredients

  • 500 g peeled sweet potatoes

  • ¾ tablespoon soy sauce

  • 1/3 cup all-purpose flour

  • ¼ teaspoon salt, or more as needed

  • 1 pinch of freshly ground black pepper

  • 1 handful of parsley

Method

  • Place the sweet potatoes in a large pan, cover with water, and bring to a boil. Cook until tender, about 20 minutes.
  • Drain transfer to a large bowl, and mash the potatoes using a potato masher.
  • Add ⅓ cup of flour and the rest of the ingredients and mix to combine. Season with more salt as needed.
  • If the mixture is very sticky, add more flour. If you use wet hands when shaping the fritters, they won’t stick to your hands.
  • In a frying pan, add some butter (or oil) on medium-low heat, just enough to cover the surface.
  • Scoop out fritter batter, and, using wet hands, form into 5 cm discs.
  • Cook until golden brown, flip, and cook the other side. Serve warm.
