Ingredients

  • 750 g 750 cake flour

  • 25 ml 25 baking powder

  • 5 ml 5 salt

  • 15 ml 15 sugar

  • 50 g 50 butter

  • 375 ml 375 milk

  • 150 g 150 fresh chopped mixed fruits

Method

  • Sift the flour, baking powder, and salt into a bowl. Stir in the sugar and make a well in the centre of dry the ingredients.
  • Melt the butter and beat the eggs and milk together lightly.
  • Pour the butter and egg mixture into the centre of the dry ingredients. Mix to just moisten.
  • Fold in the fruits.
  • Fill a greased deep-muffin pan three-quarter full with batter.
  • Bake at 200°C for 15 minutes or until cooked.
