This recipe reminds you almost of an apple tart but the apple slices are embedded in the sponge cake. The result is a soft, moist cake with surprise apple pieces inside. Including apple in this dessert gives it an almost sweet-and-sour taste.

Ingredients

  • Apple slice
  • 125 g soft butter

  • 250 ml sugar

  • 2 eggs

  • 5 ml vanilla essence

  • 125 ml milk

  • 310 ml cake flour

  • 8 ml baking powder

  • 3 apples, peeled

  • Topping
  • 60 ml brown sugar

  • 5 ml ground cinnamon

Method

  • Place the butter, sugar, eggs, vanilla essence, milk, flour and baking powder in a mixing bowl.
  • Beat on a low speed to combine, increase the speed to medium and beat for 3 minutes. Pour into a greased 20 x 30 cm Swiss roll tin.
  • Cut the apples in half, remove cores and then cut each half into 10 slices.
  • Press into the mixture in the tin. Sprinkle with the topping and bake at 180°C for 20 to 30 minutes or until the cake springs back when lightly touched.
  • Cool in the tin then cut slices.
  • Topping
  • Mix brown sugar and cinnamon.
