Almost everybody loves bacon and eggs for breakfast and as you know, it’s got everything you need from protein to healthy fats and tons of flavour. Bacon & Egg Breakfast Cups are especially great for your Sunday morning breakfast or brunch table.

Not only will you be enjoying the classic flavours of bacon and eggs, but you’ll also have fewer dishes when you’re done. Bacon & Egg Breakfast Cups are as easy as placing bacon into a muffin tin to keep the shape and adding the eggs, spinach and seasoning before popping them into the oven. The spring onion garnish adds some freshness to the party and if you want something spicy, a few chilli flakes will do great. Each serving is only 112 calories and you’ll definitely want more than one.

Bacon & Egg Breakfast Cups Recipe

Ingredients

  • 6 slices 6 Back bacon

  • 6 medium 6 Eggs

  • ½ cup ½ Chopped baby spinach

  • 10 g 10 Spring onion

  • 1 pinch 1 Salt

  • 1 pinch 1 Ground black pepper

Method

  • Preheat the oven to 180°C.
  • Place the bacon pieces into the muffin pan holder.
  • Crack the egg into the muffin pan.
  • Chop up the baby spinach finely into thin pieces.
  • Sprinkle on top and cook in the oven until the egg is fully cooked (10-15min)
  • Once fully cooked, cut up the spring onion finely and use it as garnish.
  • Serve.
