Simon finished his degree in Environmental and Geographic Science at the University of Cape Town (UCT) in 1999. He produced craft liqueurs from 2008 until 2014 as a hobby, which paid for itself at markets and festivals. He also worked in an Engineering consultancy during this time and completed a Masters’ Degree in Sustainable Development at Stellenbosch University in 2010.
